Corriander, Chilli and Scallop Pizza

Cooking Time: 12 minutes
Ingredients (serves 1)
1 cup Chilli (chili), red, raw
2 tablespoon Tomato paste, without added salt
2 tablespoon Coriander, fresh, leaves & stem
1 pita Bread, flat (pita or lebanese), white
7 scallop Scallop, raw
Method
- Mix the tomato paste and coriander together until combined.
- Spread the tomato and coriander paste evenly over the pita.
- Add the scallops and sprinkle with finely diced chilli and dill.
- Bake in very hot oven (250oC) for about 10 minutes, until crips. Enjoy
