Ingredients (serves 4)
2 steak Beef, blade steak, lean, raw
1 tablespoon Oil, sunflower
1 cup Couscous, raw
1 cup Juice, lemon
1 onion Onion, mature, white skinned, peeled, raw
1 cup Coriander, fresh, leaves & stem
1 cup Nut, almond, with skin
1 cup Bean, green, fresh, raw
Method
- Combine beef, spice mix and oil in a bowl. Season with salt, then stand for 3 minutes. Meanwhile, place couscous, lemon zest and juice in a large bowl and pour over 1/3 cup (80ml) boiling water. Cover and stand for 4 minutes, then fluff with a fork. Fold through onion, coriander, almonds and beans, then season to taste. Heat the oil in a large non-stick frypan over medium-high heat. Cook the beef in 2 batches, tossing, for 2-3 minutes until seared. Serve the beef over couscous.

600g beef stir-fry strips 3 tsp Moroccan seasoning mix (see note) 1 tbs sunflower oil 1/2 cup (100g) couscous Grated zest and juice of 1 lemon 1 small red onion, thinly sliced 1/2 cup roughly chopped coriander 1/4 cup raw almonds, roughly chopped 150g thin green beans, trimmed, blanched in boiling salted water for 2 minutes, refreshed in cold water
