Chicken Borrito

Cooking Time: 25 minutes
Ingredients (serves 4)
10 slices Cucumber, lebanese, unpeeled, raw
1 cup Cheese, cheddar, reduced fat (~ 15%)
2 tomato Tomato, common, raw
2 cup Lettuce, iceberg, raw
8 tablespoon Sauce, taco style, commercial
2 fillet Chicken, breast, lean, raw
4 pita Bread, flat (pita or lebanese), white
1 packet Seasoning mix, chilli-based, salt reduced, for tacos
Method
- Slice the tomato, cucumber and lettuce into thin slices to place on the borrito. Shred the cheese to sprinkle on to and serve with a dolip of taco sauce.
- Add chicken breast to a non-stick pan and cook until golden. Whilst the chicken is cooking, quickly take the flat bread and warm in the oven for around 5 minutes.
- Cut the chicken breast into thin slices about 1/2 cm thick. Add to a freezer bag with the taco seasoning and shake until well coated.
