Chili Mussels

Cooking Time: 20 minutes
Ingredients (serves 4)
8 cup Mussel, green, steamed or boiled
2 cup Chilli (chili), red, raw
2 clove Garlic, peeled, raw
2 teaspoon Ginger, peeled, raw
1 tablespoon Oil, olive, pure
1 cup Coriander, fresh, leaves & stem
2 lime Lime, peeled, raw
2 cup Stock, chicken, liquid, commercial
2 cup Tomato, whole, canned in tomato juice
1 tablespoon Sauce, fish, Asian, commercial
Method
- Add the olive oil, garlic, ginger and chili (chopped finely)to the pan and saute. Take the canned tomato and stock and add to the pot. Place the mussels in the pot with the corriander and add some kaffer lime leaves and the rind from the limes.
