Chicken and bean mix salad

Cooking Time: 10 minutes
Ingredients (serves 4)
1 tablespoon Parsley, continental, raw
1 tablespoon Dressing, salad, oil & vinegar, homemade
5 slices Cucumber, common, peeled, raw
5 cherry Tomato, cherry, raw
1 cup Bean, cannellini, canned in brine, drained
2 fillet Chicken, breast, lean, baked
Method
- Slice chicken and place in a large bowl. Add beans, tomato, celery, onion and parsley. Make dressing: Combine lemon rind, 2 tablespoons lemon juice, garlic, oil and sugar in a screw-top jar. Secure lid and shake until well combined. Pour dressing over salad. Season with salt and pepper and stir to combine. Serve.
